APLETS [OREGON CANDY]

Pam Williams

Soak 1/2 C cold applesauce, 2 T unflavored gelatin 10 min. Boil 2 C sugar, 3/4 C applesauce 10 min over med heat. Combine/boil 15 min stirring very frequently. Off heat add 1 C chopped walnuts, 1 T vanilla. Pour into loaf tin, let stand on counter overnight. Loosen edges, remove from pan onto mound of pd sugar [1 1/2-2 C]. Snip w/kitchen shears into 1/2” squares, rolling all surfaces in pd sugar. Rinse shears in hot water to clean. [Makes firm center for dipping in chocolate.] May substitute other fruit pulp [apricots, raspberries] of the same consistency as applesauce. Use pecans or chopped toasted almonds instead of walnuts.
