Staci Cowley

1 pound of stew meat

3-4 medium potatoes peeled and chunked

4-6 medium carrots peeled and chunked

1/2 cup of chopped onion

4-6 cups of beef broth, canned or made from bouillon cubes

1. Brown stew meat and onion in 2 tablespoons of oil, salt and pepper to taste.

2. Put the browned meat, onion and all the juices into a crockpot. Add the rest of the vegetables and beef broth, making sure that all ingredients are covered in the broth. Cook on low 6-8 hours.

3. The last 30 minutes of cooking, mix 1-2 tablespoons of cornstarch thoroughly in cold water. Add the cornstarch/water mixture to the stew and stir.

4. The stew will thicken the last 30 minutes of cooking.

Notes: My kids like this stew recipe because of its simple flavor and kid-friendly veggies. Print Recipe
