Pumpkin Waffles

Renae Golding

Dry ingredients:

2 1/2 cups flour

1 Tbsp baking powder

2 tsp cinnamon

1 tsp ginger

1/2 tsp baking soda

1/2 tsp salt

1 tsp. nutmeg

1/4 tsp cloves

liquid ingred:

4 eggs beat well

2 cups of buttermilk

1 cup of pumpkin (I use a 14 oz can)

1/2 cup brown sugar

1/4 melted butter

1 tsp vanilla

combine wet and dry mixes together and mix until just blended. you may have a few lumps but that is better than overmixing.

bake in a waffle iron. because the pumpkin is dense, it takes a little longer to bake than regular "mix" waffles. Watch for the steam coming out the sides to slow or stop.

Serve hot with syrup and whipped cream.

Note: If you don't have buttermilk you can use a cup of milk and sour it with a little lemon juice. The real buttermilk is better, but this will work also. The house smells good all day when you make these. Print Recipe
