Tinga is great for parties or for church activities … it goes a long way!
Ingredient List:
2 lbs Shredded Chicken or Beef (cooked)
12 Roma Tomatoes, diced
3-4 White Onions, sliced thin
2 Large Cloves Garlic, finely chopped
4-5 Jalapeno Chilies, cut in long slices (without seeds)
½ Cup Cilantro, finely chopped
Salt
1 Can Chipotle Chilies with Adobo Sauce
1 Bag Tostadas
Sour Cream
Queso Fresco, Crumbled
Avocado, sliced
1. Heat a little bit of cooking oil in a large frying pan. Add tomatoes, onion, garlic, jalapenos and cilantro. Lightly salt and cook stirring occasionally until onions are cooked through and tomatoes are saucy.
2. Stir in shredded beef or chicken. Stir in adobo sauce from chipotle chilies. Add a few whole chilies if you prefer your food more spicy. Add salt to taste.
3. Let all ingredients simmer together for about 5 minutes.
4. To serve, spread sour cream one side of tostada. Top with tinga. Sprinkle queso fresco on top of tinga and add several slices of avocado.
