Mini Cheese Cakes

2 (8 oz) cream cheese
1 tsp vanilla

1/2 cup sour cream
1 can pie filling (cherry, blueberry, etc)
2 eggs , slightly beaten
1/2 cup Sugar

1 box vanilla wafers
Cupcake Foil baking cups

Put wafers in cupcake Foil baking cups, either in muffin tin or cookie sheet. Mix cream cheese, 1/2 cup sugar,, vanilla, eggs, and sour cream until well blended & spoon into papers. Bake at 350 degrees for 10-15 minutes. Let cool. Add fruit topping & keep in refrigerator until serving time. Print Recipe
