Baked Macaroni and Cheese

Corinne Orton

Ingredients:

1 cup elbow macaroni

salt for cooking macaroni

1 cup thick white sauce

3 cups pre-shredded cheddar cheese

1 Tbsp. olive oil

1 cup Italian bread crumbs

Directions:

1. Preheat oven to 375E F. Grease a 9x13 baking dish with non-stick spray.

2. Cook the macaroni in a large pot of boiling water until al dente, about 8 minutes. Reserve one cup of the pasta cooking water. Drain macaroni in the colander.

3. Transfer the macaroni to the prepared baking dish. Add the white sauce, 2 cups of the cheese, and the reserved pasta cooking water, and stir until the ingredients are well combined. Scatter the remaining 1 cup cheese over the top.

4. In a small bowl, toss the olive oil with the bread crumbs, and then scatter them on top of the cheese.

5. Bake until the macaroni and cheese is bubbly and the bread crumbs are lightly browned, 25-30 minutes.
